Taralli (or tarallini) are one of the most iconic and widely consumed foods of Puglia. It is believed they were created around the 6th - 8th century and were given as gifts to the Gods. Moreish and versatile, they are a ring shaped bread snack and are perfect served with wine or cocktails at ‘aperitivo’ time – especially if accompanied by cheese and charcuterie. They can be crushed and sprinkled over salads and soups – and can substantiate a bread basket.

INGREDIENTS: Wheat flour, fennel seeds, olive oil, white wine, salt and yeast

PROCESS
To the flour, add the fennel seeds, white wine, salt, olive oil and yeast and mix well until all the ingredients have amalgamated. Pieces of the dough is cut and rolled into sticks. Both ends are brought together to form a type of bow. They are then rested and covered with a cloth. They are then placed in boiling water until they rise to the surface. They are then removed from the water and put on a cloth to dry. Once cooled, they are placed in the oven to bake. Midway through baking, they are turned to ensure they are cooked evenly. Then they are packaged. Ready to eat as a snack, with dips or crushed and sprinkled over soup.
