We pour the very essence of Italian craftsmanship, traditional Apulian methods and love into our authentic, tasty Italian sundried tomatoes. They are sourced and prepared at our farm using our family recipe and transferred into jars for you to enjoy.
Our hand picked tomatoes are cut and dried under the Apulian sun, prepared and marinated in our extra virgin olive oil. They are free from dairy, gluten, wheat, added sugar, nuts or artificial colours, flavours or preservatives. Suitable for vegans and vegetarians.
Process: Our tomatoes have a sweet flavour and low acidity and they are coveted for their firm pulp, deep red colour. They are hand-harvested then cut in half and placed cut side up on wooden framed drying racks. The tomatoes are sprinkled with salt to help them dry and the screens placed on stands in the sun for a few days. Once dried, they are washed in a mixture of water and vinegar. When the excess liquid is squeezed out, they are mixed with herbs, placed in jars and topped with our blend of Coratina, Ogliarola and Favolosa extra virgin olive oil to retain all their organoleptic qualities. Marinating our tomatoes in extra virgin olive oil ensures they keep their nutritional value which are high in lycopene, antioxidants, and vitamin C.
Organoleptic description: Our sundried tomatoes have a beautifully intense, sweet and tart flavour. They reflect the unique taste of Puglia. The aromatic smell and taste is enhanced by the use of our Terre Di San Vito extra virgin olive oil.

Perfect as part of an antipasti with your favorite fresh bread, focaccia, cured meat or cheese. They are incredible alongside fresh mozzarella, in salads, sauces or as an easy addition to a quick pasta dish. They can also be blended and used as a dip or topping for delicious crostini.
